| Spinach Feta Quiche |
Ingredients:
Makes 2 deep dish pies
Directions:
Preheat oven to 375, place pie crust with butter in the oven until butter melts, about 5 minutes. In a pan add olive oil, spinach, red peppers, and parsley, add meat of your choice at this time, mix well until the spinach wilts. Remove the crust from the oven, let it stand for another 5 minutes to cool. After cooling, it's time to layer. First spread the hummus on the bottom of the pie crust, then a layer of the spinach mixture, a layer of feta cheese and repeat. In a small bowl beat your eggs, half and half, salt, pepper together then pour the egg mixture over the spinach and cheese layers. Bake for 30 minutes and remove pie from oven, spread mozzarella over the top and return to the oven for additional 10 minutes or until cheese has melted. Let pie cool for 10 - minutes before eating.

- 1/4 cup half and half
- 1.5 tbsp feta cheese
- 3 tbsp shredded mozzarella
- 1 tsp Salt
- 1 tsp Pepper

- 1/4 cup roasted red pepper hummus
